Boneless chicken breasts stuffed with mozzarella string cheese wrapped in pepperoni, basted in a garlicky Parmesan crust.

Pepperoni, string cheese, and Parmesan stuffed into chicken — about as Italian-diner as it gets. Stuff it, baste it, bake it. Comfort food that looks like more effort than it is.
Yield: 3 servings
Ingredients
3 boneless chicken breasts
3 string cheese sticks
Enough pepperoni slices to wrap the cheese sticks
3 tbsp mayo
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 cup grated Parmesan cheese, plus 1 tbsp for topping
Bread crumbs (optional, for crunch)
Instructions
Preheat oven to 375°F (190°C / Gas Mark 5).
Wrap each string cheese stick in pepperoni slices.
Slice a pocket into each chicken breast and stuff with the wrapped cheese.
In a bowl, mix the mayo, salt, pepper, garlic powder, onion powder, and 1/4 cup Parmesan.
Baste the mixture evenly over the stuffed chicken.
Sprinkle with the remaining tablespoon of Parmesan.
Optional: top with bread crumbs for extra crunch.
Place in a baking pan and bake about 50 minutes, until internal temperature reaches 165°F (74°C).
Let rest 5 minutes before cutting in.
Notes
Bread crumbs are optional but worth it if you like texture on top.
