3 Ingredient Cheesy Potatoes

( Or, what to do with leftover Velveeta )


You will need

  • 8 x 8 or 7 x 11 baking pan

  • Large heavy pan


Ingredients

  • 1lb hash browns, frozen or fresh

  • ½ lb Velveeta cheese

  • 1 cup mayonnaise

  • salt & pepper to taste

  • OPTIANAL : a topping, such as crumbled bacon or french fried onions or potato chips




Instructions


  • Pre-heat oven to 350 F / 175 C / 4 Gas Mark

  • Grease or spray the baking pan

  • Defrost the hash browns, if using frozen

  • Chop the cheese into small chucks

  • Place into heavy pan, melt on low heat




  • Once melty, add mayonnaise, and mix

  • Once mixed, stir in hash browns and seasoning




  • Transfer mixture to prepared baking dish

  • Sprinkle on topping of choice ( I used french fried onions & cheese crackers)





  • Bake in oven for about 45 minutes

  • Let cool for 5 minutes

  • Enjoy


Notes

You can make this a larger 9 x 13 pan, just double up the ingredients.
