Biscuit Chicken Cobbler

It's like a pot pie and a biscuit mix had the perfect baby


You Will Need: 


Filling

  • 1/3 cup butter

  • 1/3 cup chopped onion

  • 1/3 cup AP flour

  • ½ tsp salt

  • ½ tsp pepper

  • 2 cups chicken broth ( or use water and bouillon )

  • ½ cup milk

  • About 2 to 3 cups of cooked chicken, chopped or shredded.

  • 2 cups frozen mixed veggies,thawed


Topping

  • 1 package biscuit mix (usually 7 to 11 oz, the cheddar garlic mix is really good)

  • either milk or water, depending on the mix instructions

  • ½ cup shredded cheese, if you want to add it


Instructions:

  • Preheat oven to 375F

  • In 2-quart saucepan, melt butter over medium heat. Add onion; cook 2 minutes, stirring frequently, until tender.

  • Stir in flour, salt, and pepper until well blended.

  • Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.

  • .Stir in chicken and mixed vegetables until thoroughly combined. Remove from heat.

  • Spoon chicken mixture into baking dish

  • Mix up the biscuits

  • Drop spoonfuls across the chicken mixture,spread gently to cover

  • Bake in oven for 30 – 35 minutes, until biscuits are golden and cooked through

  • Remove from oven, let cool for 5 – 10 minutes

  • Serve and enjoy


Notes:

  • You can also use this filling in a pot pie recipe
