Biscuit Chicken Cobbler

It's like a pot pie and a biscuit mix had the perfect baby

You Will Need:
Filling
1/3 cup butter
1/3 cup chopped onion
1/3 cup AP flour
½ tsp salt
½ tsp pepper
2 cups chicken broth ( or use water and bouillon )
½ cup milk
About 2 to 3 cups of cooked chicken, chopped or shredded.
2 cups frozen mixed veggies,thawed
Topping
1 package biscuit mix (usually 7 to 11 oz, the cheddar garlic mix is really good)
either milk or water, depending on the mix instructions
½ cup shredded cheese, if you want to add it
Instructions:
Preheat oven to 375F
In 2-quart saucepan, melt butter over medium heat. Add onion; cook 2 minutes, stirring frequently, until tender.
Stir in flour, salt, and pepper until well blended.
Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.
.Stir in chicken and mixed vegetables until thoroughly combined. Remove from heat.
Spoon chicken mixture into baking dish
Mix up the biscuits
Drop spoonfuls across the chicken mixture,spread gently to cover
Bake in oven for 30 – 35 minutes, until biscuits are golden and cooked through
Remove from oven, let cool for 5 – 10 minutes
Serve and enjoy

You can also use this filling in a pot pie recipe
