( Easy & Moist Banana Bread )

You will need
9 x 5 Loaf Pan
Mixing Bowl or Stand Mixer
Ingredients
½ cup butter, melted
1 cup white sugar
2 eggs
1 tsp vanilla extract
1 ½ cups AP flour
1 tsp baking soda
½ tsp salt
½ cup sour cream
½ cup chopped walnuts ( Optional )
2 med banana, mashed
Instructions
Pre-heat oven to 350 F / 177 C / 4 Gas Mark
Grease the loaf pan, you can add parchment paper for easy loaf removal later
Stir together the butter and sugar
Add the eggs and milk, and mix well
Add the flour, baking soda & salt, and stir until smooth
Fold in the sour cream, banana & nuts
Spread into loaf pan
Bake for 60 minutes, or until a toothpick inserted into center comes out clean
Cool for about 10 minutes in the pan
Remove to a cooling rack and allow to cool completely

Notes
This is a really moist bread, and an easy way to use a couple of bananas that are maybe a touch beyond your idea of ripe. They should honestly be almost black on the outside, so they are nice and soft.
