Cheesy Broccoli Potato Casserole

Or, a sneaky way to get the whole family to eat their veggies.



So this is a casserole that is part twice baked potato and part cheesy broccoli. It is a nice side dish to maybe get everyone in the house to eat their veggies.


You will need

  • A bowl to mix it up in.

  • A pot to boil the potatoes in

  • A 9 x 13 casserole dish

  • Peeler, knife, masher, and something to stir with


Ingredients

  • 3 large Potatoes ( I used a mix of russet & sweet )

  • 3 cups broccoli, blanched or steamed, cut into bite size pieces, ( I just used a bag of frozen, about 12 oz )

  • ¼ Cup Sour Cream

  • 4oz Cream Cheese

  • 4 Tbls Butter

  • 2 Cups Shredded Cheese ( I used colby jack, but cheddar or pepper jack would be good )

  • Seasonings to Taste: Salt, Pepper, Garlic Powder, Onion Powder, Paprika, Chives ( Use what you like )


Instructions

  • Preheat the oven to 375 F / 190 C

  • Peel and cut up potatoes



  • Boil until tender

  • Drain the potatoes well, then put into bowl

  • Add in the butter, cream cheese, sour cream and seasoning, and mash together ( if it is too thick, you can add some milk also )

  • Stir in the broccoli and 1 & 1/2 cups of the cheese

  • Spread into the casserole dish

  • Sprinkle with the remaining cheese


  • Bake, uncovered, for about 30 minutes



  • Enjoy

Notes

Adding bacon to this would be a really nice addition. Also, you could use any potatoes, I just had those on hand. And if you like spicy, I would recommend adding some red pepper flakes or chili powder to this as well, maybe even some diced up jalapenos.
