Hey there, looking for a super easy, quick weeknight dinner? Here is just the thing you need.
You will need
Large skillet
Ingredients
About a pound of gnocchi ( the fresh, shelf stable kind or the refrigerated version )
About a pound of a smoked sausage ( which ever flavor you like )
6 to 8 oz of fresh spinach ( you could sub out thawed frozen )
Sun dried tomatoes to taste
A sprinkle of Parmesan cheese for serving
Some olive oil for cooking
Instructions
Cut the sausage into bite size pieces
Brown in skillet in a little oil, when done, set aside
Brown the raw gnocchi in a little oil until browned and crispy ( No need to boil per package )
Add the spinach to the pan, and stir until wilted down
Add the sausage back in, and reheat
Add the sun dried tomatoes and stir in
Add any seasoning you like, salt, pepper, garlic, all to taste
Once all is heated, put on serving plate and sprinkle with Parmesan cheese

Again, use what ever sausage you like.
Looks delicious! Wondering how it would taste without the sun-dried tomatoes as I have one here who won't eat them? Would I need to sub those with something else to keep enough flavor in it?
