( Or; Really Easy Leftover Casserole )

Ingredients
1 lb of meat ( I use whatever leftovers I have, like roast or shredded chicken )
1 bag of tortilla chips
3 cups shredded cheese ( I like the mexican blend, but whatever you like )
1 large can enchilada sauce ( or couple small cans )
small can of green chilies ( I prefer jalapenos, but we like spicy )
½ cup salsa
1 Tbsp ground cumin
Tools
9 x 13 baking dish
non-stick spray
foil
large mixing bowl
Instructions
Heat oven to 350 F, 177 C, 4 Gas Mark
Cook your meat if needed
Put into mixing bowl
Add the chilies, salsa and cumin, and mix
Lightly crunch up bag of tortilla chips, not powdered, just bite size pieces
Add the meat mixture
Add can of enchilada sauce
Add 1 cup of cheese
Stir all together, gently
Spray baking dish with non stick spray
Pour meat and chip mixture into baking dish
Sprinkle remaining cheese on top
Cover with foil
Place in over, bake for 50 minutes
Remove foil and bake another 10 minutes or so, just to brown cheese lightly

Notes
I actually make about a half batch, for just 2 people and use about ½ the ingredients
I have made with leftover chicken and pork, but you can fresh make ground beef
The chips soften during the cooking, so have the same feel as corn tortillas
This is a great way to use up leftover meat and the remains of a bag of corn chips
You could stretch this farther with corn or black beans added as well
