Ingredients
1 pound ground beef (or chicken or pork or turkey would all work well)
1 med onion chopped
2 (4 ounce ) cans of green Chile peppers, drained
2 cups shredded cheese
¼ cup flour
4 large eggs
1 ½ cups milk
seasoning to taste
Tools
bowl
skillet
11 x 7 inch baking pan
Instructions
Pre-heat oven to 350 F / 177 C / 4 Gas Mark
Brown the onion and meat in a pan, season to your liking (I used leftover taco meat)
Arrange 1 can of peppers in bottom of pan
Sprinkle with1 cup of cheese
Layer on your meat
Top that with the other cup of cheese
Top that with other can of peppers
Mix your eggs, flour and milk in bowl
Pour the mixture over the layered items in dish
Season with salt, pepper & anything else you like ( I added cumin and garlic )
Bake in preheated oven for 50 minutes or so, until there is a touch of browning on top

Let cool for 5 minutes before cutting into

This reheats for breakfast the next day really well.
I used cheddar and Colby jack as my cheeses, but anything would work well.
