Ingredients
1 cup all purpose flour
½ teaspoon salt
2 large eggs
Tools
bowl
pizza cutter
boiling water
Instructions
Combine the flour and salt in a large bowl
Make a well in the center
Put the eggs into the well
Use a fork to beat the eggs, then gradually start incorporating the flour
As you beat them, gradually keep stirring in more flour
Keep stirring and pulling in more flour until a solid dough forms
The dough will be sticky, that is fine, as you will be adding more flour as you roll the noodles out
Turn the dough out onto a well floured work area
With floured hands, knead the dough, adding flour to keep it from sticking to your hands or the work area, until the dough is smooth and no longer sticky. This should take 5 to 10 minutes.
Wrap the dough with plastic wrap, and let chill at least 30 minutes up to overnight.
Divide the dough into 2 pieces to roll out
On a well-floured surface, roll out the dough to the desired thickness (anywhere from 1/4 inch to paper-thin, depending on your preference). Be sure to rotate or otherwise move the dough between each pass of the rolling pin to keep the dough from sticking to the work surface underneath. Sprinkle everything with flour—including the work surface when you lift the dough—as necessary to keep the dough from sticking.
Cut the noodles to what ever width you like, I recommend a pizza cutter for this
Lay the noodles out on a pan until ready to cook. Repeat with the rest of the dough
Boil the noodles in well salted water until the desired doneness is reached ( anywhere from 2 to 10 minutes, depending on the thickness)
Drain and use in your favorite recipe
