You will need
9 x 13 pan
Small bowl for seasoning mix
Ingredients
About 2 lbs potatoes ( I used russet, but red or gold would be good also )
1 stick butter
Parmesan Cheese
Seasoning mix ( I made my own, garlic, paprika, black pepper, salt, chives, cayenne and basil )
Instructions
Clean the potatoes
Add 1 stick of butter to a 9x13 baking pan
Place baking pan into a cool oven
Turn the oven to 400 and let the butter melt as the oven preheats
Remove the pan when butter is melted
Meanwhile, cut the potatoes into about 2 inch thick slices and score each potato
In a small bowl, combine Parmesan cheese and the herbs and seasoning, salt and pepper and mix well
Sprinkle seasoning mixture onto the bottom of the pan with the melted butter
Place potatoes cut side down into the pan right on top of the seasoning
Spray the tops of the potatoes with cooking spray (or, you can dip the top of the potato slice in the butter, then flip over onto the cut side ) and sprinkle with remaining 1 tablespoon of herb seasoning
Bake, uncovered, for 40 to 45 minutes or until potatoes are tender
Let rest for 5 minutes or so, to absorb the butter into the potatoes
