Oven Crispy Parmesan Potatoes

( Easy, Cheesy, and a Wonderful Side Dish )


You will need

  • 9 x 13 pan

  • Small bowl for seasoning mix

Ingredients

  • About 2 lbs potatoes ( I used russet, but red or gold would be good also )

  • 1 stick butter

  • Parmesan Cheese

  • Seasoning mix ( I made my own, garlic, paprika, black pepper, salt, chives, cayenne and basil )

Instructions

  • Clean the potatoes

  • Add 1 stick of butter to a 9x13 baking pan

  • Place baking pan into a cool oven

  • Turn the oven to 400 and let the butter melt as the oven preheats

  • Remove the pan when butter is melted

  • Meanwhile, cut the potatoes into about 2 inch thick slices and score each potato

  • In a small bowl, combine Parmesan cheese and the herbs and seasoning, salt and pepper and mix well

  • Sprinkle seasoning mixture onto the bottom of the pan with the melted butter

  • Place potatoes cut side down into the pan right on top of the seasoning

  • Spray the tops of the potatoes with cooking spray (or, you can dip the top of the potato slice in the butter, then flip over onto the cut side ) and sprinkle with remaining 1 tablespoon of herb seasoning

  • Bake, uncovered, for 40 to 45 minutes or until potatoes are tender

  • Let rest for 5 minutes or so, to absorb the butter into the potatoes
