Raspberry Clafoutis

( Yeah, it's French, No, I can't pronounce it )


You will need

  • A 10 inch round baking dish

  • Mixing Bowl




Ingredients

  • About 3 cups of fresh raspberries ( you could use any fresh berry, like cherry, blueberry etc... )

  • 2 Tbsp melted butter

  • 4 eggs

  • 1 cup milk

  • ¾ cup flour

  • ½ cup sugar

  • ¼ tsp salt

  • 1tsp vanilla extract

  • Powdered sugar, for dusting


Instructions


  • Preheat the oven to 350 F / 177 C / 4 gas mark

  • Grease the baking dish with butter

  • Dust with about 2 Tbsp of sugar

  • Arrange the berries in a single layer in baking dish



  • Mix eggs with remaining sugar and salt

  • Stir in flour

  • Stir in milk and vanilla

  • Stir in melted butter




  • Pour mixture over the berries

  • Bake in preheated oven for 40 – 45 minutes, until puffed and golden brown

  • Cool on a rack while it deflates




  • Dust with powdered sugar ( You can also top with extra berries )

  • Enjoy


Notes


Can be served warm or chilled, refrigerate leftovers. This comes out somewhere between a custard and a ducth baby pancake. So yummy.
