Here is the link to the video of me making this in real time.
You will need
A pot to boil pasta in.
A nice large deep skillet
Ingredients
Pasta, I use about a pound, but we like leftovers.
Bacon, anywhere from 4 to 8 ounces, depending on how much pasta you make.
Olive Oil, a tablespoon or so.
2 large eggs
4 to 8 ounce of parmesan cheese, fresh shredded if possible
4 tbsl salt, for the pasta water
black pepper to taste, I used about 3 heaping tablespoons in the video
Instructions
Start your water boiling, and add salt.
While water is coming up to temp, chop up the bacon.
Put bacon in med high skillet to crisp up and render out the fat, add oil if wanted.
When water boils, add pasta, boil for about 10 minutes, but check the doneness.
While doing the bacon and pasta, whisk up the 2 eggs in a bowl.
Add the parmesan and pepper to the eggs and stir together.
When the bacon gets crisp, remove skillet from heat.
When the pasta is done to your liking, add to bacon pan. Do not drain, you may need the water if your sauce needs to be thinned out..
Add the egg mixture to the pasta, and stir to coat.
Plate up and sprinkle with more parmesan.
Enjoy !
