Spaghetti Carbonara

Bacon & Cheese & Pasta, Oh My...

You will need

  • A pot to boil pasta in.

  • A nice large deep skillet

Ingredients

  • Pasta, I use about a pound, but we like leftovers.

  • Bacon, anywhere from 4 to 8 ounces, depending on how much pasta you make.

  • Olive Oil, a tablespoon or so.

  • 2 large eggs

  • 4 to 8 ounce of parmesan cheese, fresh shredded if possible

  • 4 tbsl salt, for the pasta water

  • black pepper to taste, I used about 3 heaping tablespoons in the video




Instructions

  • Start your water boiling, and add salt.

  • While water is coming up to temp, chop up the bacon.

  • Put bacon in med high skillet to crisp up and render out the fat, add oil if wanted.




  • When water boils, add pasta, boil for about 10 minutes, but check the doneness.

  • While doing the bacon and pasta, whisk up the 2 eggs in a bowl.

  • Add the parmesan and pepper to the eggs and stir together.




  • When the bacon gets crisp, remove skillet from heat.

  • When the pasta is done to your liking, add to bacon pan. Do not drain, you may need the water if your sauce needs to be thinned out..

  • Add the egg mixture to the pasta, and stir to coat.




  • Plate up and sprinkle with more parmesan.




  • Enjoy !
