Ingredients
3 boneless chicken breasts
3 string cheese sticks
enough pepperoni slices to wrap the cheese sticks
3 Tbsp Mayo
½ tsp salt
½ tsp pepper
½ tsp garlic powder
½ tsp onion powder
¼ cup grated Parmesan cheese + 1 Tbsp
Optional : bread crumbs

Instructions
Pre-heat oven to 375 F / 190 C / 5 Gas Mark
Wrap each piece of cheese in pepperoni slices
Slice pockets in the chicken breast, to hold the cheese & pepperoni
Stuff the cheese into the chicken pocket
Mix the mayo and seasonings and ¼ cup parm together in bowl
Baste evenly onto the chicken
Sprinkle with extra Tbsp of parm
Here you can add some bread crumbs, for a bit of crunch
Place into baking pan

Bake in preheated oven for 50 minutes or so, until it reaches internal temp of 165F/75C
Let cool for 5 minutes before cutting into
