You will need
Food Processor
Cutting Board
Knife
Ingredients
2 cans of tomatoes ( I prefer fire roasted )
½ med onion
1 tbsp minced garlic
1 or 2 jalapenos or peppers of your choice
1 tsp salt
1 tbsp ground cumin
about 2 tbsp of lime juice
fresh chopped Cilantro, about 3 tbsp worth
Instructions
Drain the tomatoes, but reserve the juice
Peel and rough chop the onion
Rough chop the Cilantro
Add onion, Cilantro and salt to food processor
Pulse several times, to chop up
Add garlic and cumin & pulse some more
Add tomatoes & lime juice & pulse until mixed well
If too thick, you can add some of the tomato juice you drained from the cans
Taste for seasoning levels
Store in refrigerator
It does taste better after a day or two
Enjoy
Notes
You can adjust the spice level by the pepper choice. You can use canned green chilies or fresh ghost peppers, your choice. Hot as you want.
